Yesterday, we learned how to pronounce "compote." As it turns out, you just have to say "com" and then say "pote."
This is my cat, Josephine. Please proceed to "aww" at the following pictures as she cozies up to a bowl of cherries.
For the cherry compote, we used Smitten Kitchen's sour cherry compote recipe.
We first had to remove the pits from the cherries. We just cut them all in half and took them out by hand. This process really gave my fingertips a nice rosy glow. For the entire day.
This was really a simple recipe. It was mostly just cherries, sugar, and lemon juice. Next time, we'd like to try it with balsamic vinegar instead of lemon juice.
I think this would be great on vanilla bean ice cream or maybe mixed into yogurt with granola, or just spread on toast.
